Pumpkin Roll Monkey Bread

Pumpkin Roll Monkey Bread Recipe

Pumpkin roll, meet monkey bread. If you love both treats, there’s no need to enjoy them separately anymore.
Ingredients:
Dough:
3 1/4 cups all-purpose flour
1/2 tsp salt
1 tsp pumpkin pie spice
2 Tbsp melted butter
1/2 cup warm milk
1/4 cup warm water
2/3 cup pumpkin puree
1/4 cup sugar
2 1/4 tsp active dry yeast
Coating/Layering:
1 cup sugar
2 tsp cinnamon
1 stick butter, melted
1 block cream cheese (not softened)
12oz pecan pieces
Topping (optional)
Powdered sugar
The measurements listed above are for a single batch of pumpkin roll monkey bread. Since I have a new 7 quart KitchenAid stand mixer, I had plenty of capacity to make a double batch and I’m glad I did. This treat was popular with everyone who tried it from family to friends to coworkers.
Whisk together the flour, salt, and pumpkin pie spice.
 I used the stainless steel elliptical whip attachment on my KitchedAid stand mixer which made the process easy and also mess-free thanks to the pouring shield
In a separate bowl, whisk together the milk, water, pumpkin, melted butter, sugar, and yeast.
Add wet ingredient to the dry and mix together. This step was incredibly easy thanks to my KitchenAid mixer’s flat beater and pouring shield.
Once both wet and dry ingredients are thoroughly mixed, it’s time to knead the dough. You can either turn the dough onto floured surface and knead by hand until elastic (about 8-10 minutes) or if you have a KitchenAid mixer just use the spiral dough hook attachment to do the work for you. You can guess which method I chose. Switching attachments was much easier than I anticipated and the attachments clean up very easily. I thought the flat beater would take a little time to clean after this step, but I could have easily cleaned it off with my finger and some cold water if I’d had to. It’s amazing how “non-stick” the surface of the attachments are.
The dough hook is on and ready to work. Whether kneading by hand or by mixer, keep an eye on your dough’s consistency. You’ll likely have to add flour a little at a time during the kneading process in order to get the elastic consistency that is the mark of good bread dough.
Once the dough is elastic, transfer to a bowl sprayed with cooking spray. Flip the dough over so that the top is coated and won’t dry out. Cover with a towel and allow to rise until double in size or about an hour.
While the dough is rising you can go ahead and do a little prep work for the assembly process. Cut a block of refrigerated cream cheese into tiny cubes. You’ll need to get 40-45 cubes out of one block so slice small. You can also melt a stick of butter and mix together the cinnamon and sugar for rolling the dough balls.
Once the dough has doubled in size, it’s ready to be divided into small balls. I punched my dough down first. Not because it is necessary, but because it’s a fun thing to do. :)
Pinch dough into balls that are 1 1/2 – 2 inches in diameter and tuck a cube of cream cheese inside.

Dough balls are filled with cream cheese and ready to go!
Dip each ball in the melted butter then roll in sugar/cinnamon mixture
Place one layer balls in a Bundt pan that has been sprayed with cooking spray. Sprinkle pecans on top then add another layers of balls. Repeat dough ball/pecan layers until Bundt pan is a little over half full.  A tighter packed pan makes cake-like, sliceable monkey bread whereas a lightly packed  pan (ie just laying the balls in the pan) makes for pull-apart monkey bread. That’s how I like mine. Since I didn’t tightly pack the pans, my double recipe wound up being a triple, filling three Bundt pans! No complaints about the quantity though. It was eaten up quickly.
After layering is complete, sprinkle any leftover butter and cinnamon/sugar mixture on top, cover, and allow to rise again for about an hour. Once the dough has risen for the second time, bake for 30-35 minutes in a 350 degree oven.
After baking, let the monkey bread cool in the pan for about 10 minutes (no longer or it will get stuck!) then flip onto a serving platter.  You can sprinkle the top with powdered sugar if you like. If your bread doesn’t come out of the pan easily, just pick it apart and serve in a bowl. This works best for serving a large group anyway.

This is what was going on inside my head for, like, 3 days before making these. This flavor combination needed to happen. Immediately. Had someone told me that it could not be done, I may have been forced to give up baking for life. FOR LIFE.

My dream was becoming a reality.

Armed with my hand-picked strawberries, in to the kitchen I went and through a cloud of flour, sugar, chocolate and berries, these cupcakes emerged. With panache.

These cupcakes are not pretending to be healthy, plain or simple. They are are full-on ostentatious with their vanilla bean cake, white chocolate frosting and berry compote center. They demand to eaten on bone china flatwear because, really, is there anything else on which a Vanilla Bean Cupcake with White Chocolate Frosting and Strawberry Filling can be eaten? No. There is not.

(Unless you’re one of my lovely co-workers. Then it’s totally acceptable to eat it on a paper towel with a plastic fork or freshly-Purelled hands. Desperate times, ladies. Desperate times.)

If you have an afternoon to kill and are lucky enough to have fresh strawberries around, I highhhhllllyyyyy suggest making these. The vanilla cake is just beyond, and the white chocolate frosting adds a little element of sophistication. And  something about biting in to a cupcake and finding it stuffed with beautiful strawberry compote makes plain, unfilled cupcakes almost obsolete (I said “almost”… let’s not get crazy here).

So go ahead, break out your bone china on a random Friday afternoon. These cupcakes absolutely insist upon it.

Recipe
Prep time: 20 minutes | Bake time: 15-20 minutes | Cooling/Assembly: 1.5 hours | Total time: Approximately 2.5 hours
Yield: 24 cupcakes
Cupcakes
  • 1 cup whole milk at room temp
  • 4 egg whites at room temp
  • 1 egg at room temp
  • 2 teaspoons vanilla extract
  • 1/2 teaspoons almond extract
  • Seeds from 1 vanilla bean
  • 3 cups cake flour
  • 1 1/2 cups sugar
  • 1 tablespoon + 1 teaspoon baking powder
  • 3/4 teaspoons salt
  • 6 tablespoons unsalted butter, room temp
  • 6 tablespoons shortening, room temp
Strawberry Compote Filling
  • 1 pint fresh strawberries, stems removed, chopped
  • 1 cup (8 oz) strawberry preserves
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
White Chocolate Frosting
  • 6 oz white chocolate, coarsely chopped
  • 1 1/2 cups granulated sugar
  • 1/3 cups all purpose flour
  • 1/3 cups heavy cream
  • 1 1/2 cup milk
  • 1 1/2 cups (3 sticks) unsalted butter, room temp
  • 1 1/2 teaspoons vanilla
  • 1 cup confectioners sugar
For the cupcakes:
Preheat your oven to 350 ° F. Line two standard cupcake pans with liners and set aside. In a bowl, combine milk, egg whites, egg, vanilla and almond extracts and vanilla bean seeds. Set aside.
In the bowl of a stand mixture fitted with a paddle attachment, combine dry ingredients. Set aside. Add the butter and shortening, stir by hand for about 30 seconds, then combine on medium speed for another 30 seconds (this helps reduce flour spillage/overflow). Slowly add the wet ingredients to the dry, increase the speed, and mix for approximately 1 minute, making sure to stop once in the middle to scrape down the sides of the bowl.
Fill cupcake liners about 2/3 of the way full with the batter. Place in the middle rack of the oven and bake until the cupcakes are springy and a toothpick inserted in to the center comes out clean, about 15-20 minutes. Once fully baked, remove cupcakes from the oven and place immediately in the freezer to cool (this helps stop the baking process and results in a more moist cake).
For the strawberry compote:
Place strawberries, preserves and sugar into a medium saucepan. Heat on low heat for about 20 minutes, stirring occasionally. Add in cornstarch and heat for approximately 5 more minutes. Remove from heat and let cool.
For the frosting:
Melt the chocolate in a microwave or double boiler, being careful not to burn. Set aside to cool. In a large saucepan, mix granulated sugar and flour, then add milk and heavy cream. Whisk together until combined, then heat over medium low heat, whisking occasionally. for about 20 minutes.
When mixture has thickened, transfer to the bowl of a stand mixer fitted with a paddle attachment and mix on medium high speed until cool. Reduce the speed to low and slowly add the butter. Increase the speed to high and whip until frosting is light and fluffy. Add in your melted chocolate and vanilla and combine thoroughly.  Add the granulated sugar and whip a few minutes more. If frosting is still slightly runny, stick the whole bowl in the freezer for about 10 minutes, then mix again. Repeat until frosting is desired consistency.
Assembly:
Remove the cupcakes from the freezer. Using a small knife or apple corer, cut out the center of each cupcake (cutting out a kind of cone shape from the middle works best- here’s how ) . Fill the hole with the compote, about 1 teaspoon per cupcake. Fit a piping bag with desired tip and fill the bag with frosting (if you don’t have a piping bag, just scoop frosting into a large ziplock and cut off small piece of the corner). Pipe frosting onto each cupcake (be generous, this frosting is delicious). Garnish with some elegant sprinkles, or something else fabulous. Devour off of an over-priced plate.

Mini Peach Cobblers
Mini peach cobbles, a bite-sized summer treat.
Ingredients
  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • Dash of salt
  • 3/4 cup milk
  • 1/2 cup (1 stick) butter, melted
  • Brown sugar
  • Cinnamon
  • 1 can peaches, diced
Instructions
  1. Preheat oven to 350 degrees.
  2. Put 1 teaspoon of melted butter into each regular size muffin tin.
  3. With a wooden spoon stir together the sugar, flour, baking powder, salt and milk.
  4. Put 2 tablespoons of batter into each muffin tin.
  5. Add 1 tablespoon diced peaches on top of the batter.
  6. Sprinkle with brown sugar and then cinnamon.
  7. Bake for 12 minutes.
  8. Let them cool almost completely before taking out of pan. Use a butter knife to loosen the edges then just lift them out.

Serving Size: 2 cookies
Slice ‘n Bake Chocolate Chip Cookies
Sometimes it's just nice to have a log of homemade cookie dough readily available to quickly slice and bake! Did I mention these make perfect cookies for ice cream sandwiches?
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cup all-purpose flour
  • 2 cups rolled oats, ground in blender to a coarse powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups semi-sweet chocolate chips
In a large mixing bowl, beat together the butter and sugars until light and fluffy (about 2 1/2 minutes). Add the eggs one at a time, then the vanilla. Beat on medium speed for another full 1 minute.
In a separate medium bowl, whisk together the flour, ground oats, baking soda and salt. Gradually stir into the wet ingredients until just combined. Fold in the chocolate chips.
To bake immediately, drop tablespoons of dough onto line baking sheet and bake at 350 degrees F for 10 minutes or until the edges just start to brown.
To make a slice 'n bake log for baking later, cut out two pieces of parchment paper into 10- by 15-inch rectangles. Portion half of the cookie dough onto one of the parchment rectangles and shape into a 2- by 10-inch log. Roll up into the parchment paper, twist the ends to seal. Repeat with the remaining dough and parchment rectangle.
Store in the fridge for up to 1 week, or in the freezer for up to 1 month. If you would like to store them a little longer, I suggest using plastic wrap instead of the parchment paper. When ready to bake, slice 3/4-inch rounds out of cookie dough log. Place on baking sheet, spaced two inches apart, and bake in a preheated 350 degree F oven for 10-12 minutes, or until edges begin to brown. Rotate the pan halfway through baking, to ensure even browning.
Notes
This recipe instructs to create two logs, which make larger cookies. For smaller cookies, divide the dough into three logs.

The Importance of Prayer

Wednesday night is my regular bible study night. Assistant Pastor Elder Cobbert was the teacher on last night, June 5, 2013. The service was awesome and it related so well to me and most of the other members. In my walk with God I realize that my prayer is a strong and powerful thing.
